UK chef Gill Meller’s cookbooks are widely admired for their unique perspective on food. In his new hardcover cookbook, Outside, he celebrates the joys of cooking and eating outdoors.
Written from his rural home overlooking the sea, Meller shares the magic of open-air cooking, whether it is a simple campfire on the beach, a barbecue in the garden, or a leisurely picnic.
Partnered with beautiful photography by Andrew Montgomery, his poetic recipes evoke summery platters laid out on tables, slow, gentle outdoor meals, and the joy of eating in harmony with the seasons. There are also several salads perfect for outdoor dining without any cooking, including Raw Asparagus with Mint, Lemon, Goat’s Cheese and Pea Tops, and Radicchio with Wholegrain Mustard, Dates and Celeriac. Among the recipes that do call for flames, the Fire Breads with Tomato, Extra Virgin Olive Oil, Garlic, and Basil stand out.
Meller’s cooking is inspired by the seasons, encouraging cooks to embrace fresh, local ingredients while celebrating the simple joys of outdoor dining.
